Steps for making Turkish coffee: 1. Measure one tablespoon of freshly ground Turkish coffee for each cup you prepare. Place the ground coffee in a Turkish coffee pot (cezve). Add one teaspoon of sugar per cup and stir with a spoon until completely dissolved. 2. Add one cup of cold water for every tablespoon of coffee. Stir the mixture together before placing the pot on the stove over medium-high heat. As the coffee heats, it will begin to foam and rise in the pot. 3. When most of the foam has risen to the top of the pot, carefully remove it with a spoon and distribute it among the coffee cups. This process should be repeated several times until a thin layer of foam remains on top. 4. Wait for the coffee to boil without stirring. Once it boils, remove it from the heat and let it sit for 30 seconds before returning it to the stove. 5. Repeat this process three times, making sure not to spill the foam each time before returning it to the heat. 6. Once all three boiling cycles are complete, remove the pot from the heat and gently pour the coffee into cups, being careful not to disturb any foam that has formed on top. Serve immediately while hot and enjoy.
